Every time I drink the homemade kefir probiotic liquid yoghurt my mother makes, I always feel better when I haven’t eaten anything that day. I tried to search online if it has any calories or stimulates an insulin response but I can’t find any information on any homemade variants. Can you find what ingredients are in it? Also how much of the yoghurt are you taking?
My mother mixes in milk with the kefir mushrooms and it consumes the milk in order to ferment. I’m wondering if the end result would stimulate an insulin response and break a fast. My mother insists that it’s like taking medicine with water, where the probiotic is the medicine and the liquid yoghurt is like the water.
@Mina, yes, kefir breaks a fast. Kefir is fermented milk and most of the milk sugars are fermented by the bacteria, plus you still have the protein and fat from it. I enjoy kefir but not on fasting days. If you take a look at commercial plain kefir, you’ll see the caloric count. All fermented foods are a bit iffy with the carbs due to how long it’s been fermented and how much sugar is left.
It differs in nutrition depending on the type of milk that is used and the fermentation method, so I’m not sure about that specific recipe or the amounts!
It chemically breaks down the milk with its abundance of bacteria and yeasts and converts the carbohydrates in the milk to lactic acid, leaving the milk with almost no lactose. However, there are still some sugars remaining in the milk. So even though it represent a source of ingestible microorganisms there are still calories left from protein and fat which will break the fast.
It’s not necessary to drink that, since you can always add those health benefits from it while refeeding, but no hard rules as long as you’re listening to your body and implement what feels good for you!
So it’s basically like a pared version of the fast-mimicking regime, or an extreme version of OMAD. I had my suspicions that it would break the fast, but I wanted to make sure. Thanks!
