I’m very happy to be back at my pre-holiday weight!! I was feeling sick, so I ended my fast yesterday evening. I’m also very happy with my re-feed - no over-eating and now I have healthy leftovers for today.

I notice that after water fasting, my palate is reset and normal foods can be a bit too intense at first. I have decided to take advantage of this fact and set up a huge goal for my next extended fast: switch to a plant-based, whole food diet with no added oils, salt and sugar during my next refeed.

I have found some very inspiring youtube channels with recipes that don’t look too bland, weird or overly-complicated. I have also found some extremely detailed demos of menu planning, meal preps, cooking methods, food storage and kitchen organization.

It’s funny but I think the biggest game changer for me is that I now have a tall chair, so I can sit down while following along with a step by step videos guiding me through the process.

Sounds great :grin: I truely think plant based is the way forward, so much nutrition in veg so much diversity of dishes.

I love the fact the hardest thing to digest is nuts :joy:

Thanks @Cate_Alexandra :grinning: I would be happy to share! I just hope I’m not pointing anyone down the wrong path, lol. I’m going to gradually test this out and record my thoughts here.

My original plan was to test out one new vegan recipe this week while sticking with my normal diet.

Unfortunately, after no food yesterday, I ate some not so healthy food today and was super sick to my stomach right afterwards. I will probably be eating a completely bland diet tomorrow of broth and boiled veggies instead of trying out a fun and creative new recipe. This is not at all the way I wanted to transition to a plant-based, whole food diet.

Might I suggest mushroom risotto :yum:
Onion (replace with onion tops/leeks or chives in midway if Lowfodmap)
Risotto rice
Garlic (use garlic infused oil if Lowfodmap use 2tbs at the start when saute the rice)
Cup of greens sauted (anything… their just nutrient dense omit by all means)
Mushrooms (canned or oyster for Lowfodmap)
Veg stock (added a half cup at a time)

Do you know what triggered feeling unwell yesterday?

If you need any help finding some safe vegan foods don’t hesitate to ask… Maybe elaborate plantbased isn’t how you need to start… maybe plantbased could be your refuge from digestive discomfort… it’s how I transitioned to the lifestyle. It’s also how I discovered all my allergies and why the western diet was making me so ill.
