I’m starting a keto plan this week. I don’t have any days off from work at the moment, so will sort of have to fit it in as best as I can. My initial plan is to cook up sort of a basic chili recipe - meat, onions, peppers, spices - then make a basic salsa, and try to mix that together and eat it with a lot of spinach or romaine lettuce. I’ll just be winging it for the first while, developing as I go. My goal here is to lower my glycogen stores before my next fast, because my fasts are short so I want to promote rapid ketosis.

I made the chili, although it was like chili without sauce - just some diced tomatoes in there instead of sugar, vinegar, tomato paste, etc. I put some edamame beans in there because they are more protein than carb. In the end, I ate it like lettuce tacos, putting the chili and some salsa on leaves of romaine. I stuffed a few of them with spinach as well.

It was good, although I don’t really care anymore. Food is just fuel to me since I quit sugar. Now all I want is to find the right fuel. The biggest difference today was that I realized I really don’t need to taste most carbs at work - the most important tastings are the savoury sauces. On a keto plan, I can taste a fond de veau based truffle sauce without concern - I just have a spoonful rather than dipping a crouton in it for the tasting. For the desserts and toppings, I just have a server or plongeur taste it for me - not rocket science.
Ma congé est lundi, so I’m planning for that day to be my “keto-flu”, although, already being off sugar for a couple years, I might not really experience the withdrawals that others experience. We’ll see. I’m not planning on fulltime keto; I only want to use it to maximize my short fasts. This week, however, I plan to stay very low carb just to see what happens. I want to go super low carb the day before my next short fast, to speed my path to ketosis.

Keto Mayonnaise from Keto Meal Prep book by Liz Williams

This recipe for mayonnaise is simple to make, can be stored for up to a week, and makes for a guilt-free addition to any dish. Before beginning this recipe make sure the ingredients are at room temperature so that the eggs disperse evenly. Makes about 2 cups.

2 large egg yolks at room temperature
1 teaspoon salt
1 teaspoon Dijon mustard
2 tablespoons freshly squeezed lemon juice
1 tablespoon apple cider vinegar
1 1/2 cups extra virgin olive oil or avocado oil

  1. In a food processor, blend the yolks, salt, mustard, lemon juice and vinegar for about 30 seconds or until the mixture thickens.
  2. With the food processor running on high speed, slowly drizzle the oil into the egg mixture until it thickens.
  3. Transfer to a storage container or jar.

Storage: Place the airtight container or jar in the refrigerator for up to a week.
