Kellie Does Keto - 21 day Journey

I watched forks over knives a few weeks ago and it definitely opened my eyes! Is your dad vegetarian after all he sees? What would your dad say of grass fed meat as far as being healthier? Thank you !

Oh my dad is completely entrenched in the military industrial food complex- bigger is better, streamline production, and animals are nothing but inputs/cogs in a wheel. Nutrition/health has nothing to do with his worldview and he would be completely indifferent to grass fed unless some consumers didn’t want it. However, there is no true grass fed/pasture raised beef in major markets. USDA labeling laws actually say that meat can be labeled grass fed if they only eat grass for 3-4 months before they are slaughtered. Processing, additives, and preservatives are a way of life for my dad as a food scientist. He is morbidly obese, pre-diabetic, and has serious heart issues. Regardless, I don’t judge anyone for their eating habits. It’s not my place to enforce certain worldviews on people. I don’t believe everything I think. I am also privileged enough to be able to afford to eat a certain diet. So many people just need food.

Have you read anything by Michael Pollan? Especially the Omnivore’s Dilemma. I love food anthropology! The most important food ā€œruleā€ I try to adhere to is eating as much local food as possible.

Thank you for your response!! I’m fascinated with food and diet and health too, my being overweight is a mental problem, it’s not cause I don’t want to understand health so this is just a super interesting subject  I’ve heard of Pollan and will look in that book (movie?) you mentioned! I pray for your dad … the powers that be and all the shit they put in our food to keep us sick, addicted and dumbed down makes me soooo mad !! . it’s just pure evil !! Thank you Kellie!!

I have pretty strong views on the food industry as well but we literally vote with our money. If we show demand for other foods/ products the market will adjust to that. However, the whole industry is geared towards processed foods so even the most wholesome foods get bastardized into value added products that no longer resemble their original forms.

That being said, as a chef, I’m always eager to experiment with new things

Michael Pollan is an investigative journalist that primarily writes books about food, its’ origins, history, place in society and how it relates to all the ā€œisms.ā€ His perspectives on food justice in socio-economic groups and how the way women are treated effects food are beautifully insightful

Thank you Kellie ! A chef! That’s really awesome. So everything I’ve been reading about as far as vegan is for people like me that gain weight on ā€œbad carbsā€ā€¦ they say either eating high fat vegan or low fat vegan is the answer to keep blood sugars down (that the fat clogs up the cells to let the sugars in which causes insulin resistance)… any thoughts on that? I’m very interested is going vegan but don’t want to screw up my blood sugars and cause more issues. I don’t have diabetes but definitely insulin resistance (the pre-curser to it)… thank you !!

I am not a dr/nutritionist but I have found Dr. Jason Fung’s books a reliable source of recent peer reviewed science based almost exclusively on human trails. I take all nutrition methodologies with a pretty heavy grain of salt.

That was a great response .ty!! From what I’ve read Fung appears to be all about a meat based (carbs are the enemy) Dr. even though I love him ! I will just experiment but be more mindful of how my body is reacting instead of my head making a plan and trying to force it on my body. Thanks for your responses ! Have an amazing day !
